Guest guest Posted April 13, 1999 Report Share Posted April 13, 1999 * Exported from MasterCook * Dijon Vinaigrette with Grilled Vegetables Recipe By : Serving Size : 0 Preparation Time :0:00 Categories : Sauces & Seasonings " Post " Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup vegetable oil 1/2 cup Dijon Mustard 1/2 cup champagne vinegar or white wine vinegar 1/4 teaspoon salt 1/2 teaspoon pepper 2 garlic cloves -- minced 2 red bell peppers 2 green bell peppers 2 zucchini 2 yellow squash 1 large onion 1 package fresh mushrooms -- (8-ounce) Whisk together first 6 ingredients. Cut red pepper and next four ingredients into large pieces. Place cut vegetables in a large zip-top plastic bag; add Dijon Vinaigrette. Seal bag, and toss to coat. Chill 2 hours; add mushrooms before last 30 minutes. Drain vegetables, reserving vinaigrette. Arrange vegetables in a grill basket. Cook, covered with grill lid, over medium-high heat (350° to 400°) for 30 minutes, turning vegetables occasionally. Return vegetables to reserved vinaigrette, tossing gently. Serve warm or chilled.
