Cooking With Apples

*** Teach Your Apples some New Tricks

Try these fresh ideas for your favorite fall fruit.

* Beyond Apple Pie.

Try some traditional French favorites, tarte tatin or

a galette.

Both are simple yet sophisticated twists on

the standard apple pie.

Tarte tatin is a classic French dessert in which apple

slices are arranged in a decorative pattern,

baked under a layer of pastry, and then flipped

onto a serving platter so the crisp crust is

on the bottom and the tender apples are on top.

To enjoy the rustic beauty of a galette,

you'll just need to arrange apple slices on top

of a circle of pie pastry,

leaving a 1 to 2-inch pastry border around the edges.

All that's left to do is fold the pastry up around the

edges and bake until golden!

For a fun twist, try making miniature, individual serving

size versions of these desserts.

* Apples in Everything!

Sprinkle a taste of autumn into your bread

pudding, rice pudding, or muffin batter by mixing

in small cubes of apple.

Bake or stew sliced apples with sugar and spices, and a

splash of wine or liqueur if you like.

Keep the concoction on hand as a wonderful topping

for oatmeal, ice cream, pound cake,

or as a filling for layer cakes or coffeecakes.
