Guest guest Posted August 19, 2003 Report Share Posted August 19, 2003 Creamy Grits 4 cups water 1 tsp table salt 1 cup quick or old-fashioned white grits --(not instant!) 1 1/3 cups milk (not lowfat) 2/3 cup heavy cream 6 tablespoons butter (not margarine) Freshly ground black pepper, to taste In a large, heavy saucepan bring water to a boil. Add salt and grits and stir to combine. Reduce heat to a slow boil. Cover, stirring well occasionally. When grits thicken add milk, cream and butter. Bring to a boil again. Reduce heat to a simmer, cover sauce pan and cook for about 45 minutes until smooth and creamy. Stir occasionally. Add a bit more water if needed.
