Guest guest Posted August 19, 2003 Report Share Posted August 19, 2003 Roasted Onion Guacamole 1 lg. red onion 2 garlic cloves 2 T balsamic vinegar 1 T olive oil 4 small ripe avocados, peeled 1 T lemon juice 1/2 tsp salt 1/2 tsp dried Italian seasoning Chop onion and garlic. Combine first 4 ingredients and place in a foil-lined baking dish. Bake at 425 degrees for 25 to 30 minutes or until lightly browned, stirring once. Cool. Mash avocados in a medium bowl. Stir in the onion mixture, lemon juice, salt and Italian seasoning. Chill at least 1 hour.
