Guest guest Posted August 9, 2003 Report Share Posted August 9, 2003 Yellow Squash Casserole 2 c. Yellow Squash, Cooked and Mashed 1/2 c. butter, melted, divided 1 tsp. Salt 1/8 to 1/4 tsp black pepper (to taste) 1/4 c. to 1/2 c. peeled and chopped Vidalia or sweet type onion 3/4 c. to 1 c. Saltine Cracker Crumbs or Crushed Potato Chips 2 large Eggs, beaten In a heavy saucepan, cook onion with half the melted butter, salt and black pepper. Add squash. Stir to combine. Reduce heat to low. Cover with lid. Cook until tender. Add very little water and ONLY if needed. Squash has water in it. Keep the lid on it. When done, mash squash. Do NOT drain. Mix with half of the cracker crumbs or potato chips and the beaten eggs. Pour into a greased 2 quart casserole. Sprinkle with remaining crumbs or chips. Drizzle with rest of melted butter.
