Pay a visit to the farmers' market, a roadside stand, or just the good ol' grocery store and load up your basket. Here are some fresh new ways to enjoy your favorite fruits. * Tantalizing Tarts. Elegant and enticing, a fruit tart is a gorgeous display of fresh, ripe fruit. Bake a pie or tart shell, fill it with vanilla custard, and top it with several different kinds of fruit with contrasting colors and shapes, taking the time to arrange the fruit into beautiful rows on top of the tart. Try nectarine, apricot, plum, or kiwi slices paired with whole raspberries, blueberries, or blackberries. To get that glistening finish like the tarts you see in the bakery, all you need to do is take a great big spoonful of your favorite fruit jelly and melt it over low heat. To add a touch of sophistication, pour in a splash of hazelnut, orange or coffee liqueur. Brush the melted jelly mixture the fruit with a pastry brush and garnish with a few sprigs of lush green mint. * Fruit Now, Fruit Later. Most delectable fresh fruit at the height of its season is also the most plentiful, and therefore, the cheapest. Lucky, lucky you! Take the opportunity to gorge yourself silly on all your fruity favorites, and when you don't have any more room left, buy some more and freeze it for the long fall, winter and spring ahead of you. To freeze berries, rinse them if you like, drain them on paper towels, and then spread them in a single layer on a baking sheet. (Peaches and other stone fruits can be frozen like this as well; remove pits and halve or slice first.) Freeze until solid, and then store in freezer-weight zip-close plastic bags, squeezing out as much air as possible. They'll keep for up to six months like this. Use them right out of the freezer for baking, beverages, or just topping your breakfast cereal. * Put Your Fruit in New Places. Try something different with your fruit today. Put any fresh fruit in a green salad for a refreshing burst of juicy sweetness. Substitute peaches, mangos, berries, or pineapple for the tomatoes in your favorite salsa recipe and serve with tortilla chips or spoon generously over any grilled entree. For an easy but exotic dessert, cut nectarines, peaches, or plums in half and grill them until soft and lightly browned. Concoct a sweet sauce of honey, vanilla, and mint, or brown sugar, cinnamon, and cardamom; warm it in a saucepan drizzle it over the fruit.
