Felafels Ingredients 400g canned chickpeas (garbanzos), drained and rinsed 4 spring onions or 1 Spanish onion, chopped 2 cloves of garlic, chopped ¼ cup chopped fresh parsley 1 tablespoon chopped mint 1 tablespoon chopped coriander ¼ tsp chilli powder 1 teaspoon salt 1 ½ tsp ground cumin 1 tsp ground coriander 1 ½ Tablespoons self-raising flour light olive oil for frying sliced cucumber sliced red onion chopped tomato chopped parsley and mint Dressing: ½ cup plain yoghurt 1 tablespoon olive oil 1 tablespoon lemon juice Method In a food processor combine the chickpeas, spring onions, garlic, parsley, mint coriander, chilli, salt, cumin and ground coriander. Transfer to a bowl and stir through flour. In a small frying pan or wok heat the oil. Roll tablespoonfuls of the felafel mixture between your palms and flatten slightly. Place balls a couple at a time gently into the oil and fry for 5 minutes until golden. Remove with a slotted spoon and drain on absorbent paper. Mix together dressing ingredients. Toss together cucumber, red onion, tomato and herbs. Place on a platter. Top with felafels and drizzle with yoghurt dressing. ~Lesley Ann~ England.
