Guest guest Posted July 6, 2003 Report Share Posted July 6, 2003 Southern Okra 1 Tablespoon sugar 1 teaspoon all-purpose flour 1/2 teaspoon salt 1/2 teaspoon pepper 2 cups sliced fresh okra 2 Tablespoons vegetable oil 1 medium onion, chopped 1 medium green pepper chopped 3 medium tomatoes, peeled and chopped Hot cooked rice Directions: Combine the first four ingredients; set aside. In a covered saucepan, cook the okra in boiling water for 10 minutes or until tender. Drain and set aside. In a skillet, heat oil over medium heat. Saute onion and green pepper until tender. Stir in sugar mixture and tomatoes; cook for 5 minutes. Add okra and simmer until heated through, stirring as little as possible. Serve with rice.
