Guest guest Report post Posted April 15, 2003 Zucchini Relish Ingredients: 10 cups shredded zucchini 4 cups chopped onion 2 green peppers, chopped 2 red sweet peppers, chopped 2 yellow peppers, chopped 1/3 cup salt 1 teaspoon turmeric 1 heaping tablespoon of cornstarch 1 teaspoon curry powder 1 teaspoon celery seed 1/2 teaspoon pepper (black) 2 1/2 cups apple cider vinegar 4 1/2 cups sugar Preparation: Mix 1/3 cup vinegar with zucchini, onion & peppers. Let stand overnight. Drain & rinse in cold water. Add balance of ingredients & boil 20 - 30 minutes until thick. Process in pint jars (water bath) 5 minutes.
