Guest guest Posted April 10, 2003 Report Share Posted April 10, 2003 Confetti Slaw 8 servings—Egg- & Dairy-free Dressing 1 cup soy or regular mayonnaise 3 Tbs. fresh lemon juice 2 tsp. prepared white horseradish 2 tsp. rice vinegar or balsamic vinegar 1 1/2 tsp. Dijon mustard 1 small clove garlic, minced 1/2 tsp. salt 1/4 tsp. freshly ground pepper Salad 2 cups shredded green cabbage 2 cups shredded red cabbage 2 cups peeled, shredded carrots 2 cups shredded celery root or daikon 1 cup diced red onion 1 cup dried currants or raisins Make dressing: In medium bowl. mix all ingredients until well combined. In large bowl, combine both cabbages, carrots, celery root, red onion and currants. Add dressing and toss to coat. Season with salt and freshly ground pepper to taste and serve.
