Guest guest Posted February 11, 2003 Report Share Posted February 11, 2003 Pickled Black-Eyed Peas Prep time : 20 min Ready in :2 hr 20 min Ingredients: 2 cans (16 oz. each) black-eyed peas, rinsed, drained 1 small onion, chopped 1/4 cup chopped green pepper 1/4 cup chopped red pepper 1/4 cup chopped dark purple pepper 1 Tbsp. minced garlic 1/2 cup KRAFT Zesty Italian Dressing 1 head Boston lettuce, separated into 8 leaves Preparation: Toss black-eyed peas, onion, peppers and garlic in medium bowl. Add dressing; mix lightly. Cover. Refrigerate several hours or overnight, stirring occasionally.
