They are frequently served with applesauce. Taste for Living Chef Beth Ginsberg likes a mix of potatoes, carrots and zucchini in her latkes, but feel free to vary the vegetables: turnips, parsnips, squashes and sweet potatoes are all good. Be sure to always include some starchy potatoes, which help hold the pancakes together. Ingredients 6 - medium baking potatoes (about 3 lbs/1.4 K), peeled 2 - medium carrots, peeled 2 - medium zucchini 1 - medium onion 1 tablespoon snipped chives 1 teaspoon granulated onion 2 tablespoons matzoh meal or unbleached white flour 1/4 teaspoon baking powder 1/4 teaspoon sea salt - - Freshly ground black pepper, to taste 1/4 cup (2 fl oz/60 ml) fat-free egg product or 2 large egg whites - - No-stick cooking spray Preparation - Estimated cooking time: 30-60 minutes - 1 Preheat the oven to 350 degrees F (175 degrees C). Spray 2 baking sheets with cooking spray. 2 In a food processor fitted with a large grating blade, grate potatoes, carrots, zucchini and onion. (This may also be done with a hand-held grater.) Transfer vegetables to a large mixing bowl. 3 Stir in chives, granulated onion, matzoh meal or flour, baking powder, salt, pepper and eggs. 4 Respray griddle or skillet with cooking spray and place over medium-low heat. Working in batches, drop spoonfuls of the potato mixture onto the hot pan, then spread into 3-inch (7.5-cm) cakes with the back of the spoon. Cook until browned on the bottom, about 5 minutes, turn over with a spatula and brown on the second side. Respray or skillet griddle between batches. 5 As the pancakes are done, transfer to a prepared baking sheet. Bake the pancakes an additional 30 minutes. Serve hot.
