Make sure that the bowl (stainless steel or oven-proof) is very dry. Cut the chocolate into small pieces before adding it to the bowl. Always place the bowl over steaming, not boiling water. A microwave oven also works well for melting chocolate. Place the chocolate pieces in a microwavable dish. Set the oven on medium power (50%) and heat for 40 seconds for one ounce (approximately 1 minute for 2 ounces, 2 minutes for 4 ounces and 3 minutes for 8 ounces).
