Guest guest Posted November 8, 2002 Report Share Posted November 8, 2002 Mushroom Garden Baked Potatoes INGREDIENTS: 4 t Olive oil 8 oz Fresh mushrooms, sliced 1 Red bell pepper (small), seeded and cut into 1 " squares 1 large clove Garlic, minced 2 T Water 1 1/2 T Lemon juice Salt and pepper to taste 2 Baked potatoes (about 6 oz each) Parsley, chopped PREPARATION METHOD Heat oil in 8 to 10 inch skillet. Add mushrooms, bell pepper and garlic. Toss over high heat until mushrooms brown lightly. Add water and lemon juice. Reduce heat to low. Cook and stir 3 minutes. Season with salt and pepper. Split and fluff potatoes. Top with hot mushroom mixture. Sprinkle with chopped parsley. Makes 2 servings.
