Potato Carrot Kugel

 

1 cup grated carrots

2 Tbsp chopped onion

¾ cup vegetable stock

¼ cup soy margarine

3 cups grated potatoes

2 tsp Ener-G Egg Replacer

3 Tbsp water

¼ cup whole wheat flour

¼ cup wheat germ

pinch of black pepper

large dash garlic powder

1-1/2 tsp veg-it seasoning

1 tsp baking powder

 

Cook carrots and onion in stock and margarine for several minutes

until tender. Grate potatoes and add immediately. Remove from heat.

In small bowl., combine 1 teaspoon Ener-G Egg Replacer and 1 Tbsp

water; beat slightly with whisk. Mix together with the flour, wheat

germ, baking powder, and seasonings and add to vegetables. In the

small bowl, combine 1 tsp Ener-G Egg Replacer and 2 Tbsp water; beat

until fairly stiff. Fold into vegetable mixture. Pour into oiled loaf

pan and bake for 1 hour at 300 degrees F.
