Lentils and Strings

Ingredients

1 cup lentils, rinsed

1 cup vegetable broth*

3 cups water

1/4 teaspoon each salt, pepper, and crush red pepper

1/8 teaspoon oregano, thyme, basil, rosemary

1/2 onion, chopped

2 cloves garlic, minced

 

Place all ingredients above in a pot to boil. Cover. Reduce to medium heat.

After 30 minutes add...

 

 

1 LB. fresh green beans, cleaned and snapped in half

1 14oz. can stewed tomatoes

 

Continue cooking on medium heat for 25 minutes.

 

Stir in... 2 Tablespoons olive oil...and let cook another 5 mintues.

 

Serve with honey/butter toast or coconut chapatis.

 

 

 

* tip - i use vegetable bouillon cubes...check the package to see how much

water to add for one cup...buillon stores better than liquid broth...
