Guest guest Posted November 6, 2002 Report Share Posted November 6, 2002 Black Bean Soup -- I found a wonderful Mexican vegetarian cookbook at a used book sale recently. This is one I plan to try. Ingredients 2 cups black beans 2 large onions, diced 2 bell peppers, diced 10 cloves garlic, diced 5 cups water 2 hot peppers 2 teaspoon cumin powder 2 bay leaves 2 teaspoon oregano salt Directions Soak beans overnight. Boil all ingredients together for 2 - 3 hours. Thirty minutes before serving, add the juice of one or two limes. Serve with garnish of chopped onion, parsely, chile peppers, tomatoes, thinned sour cream, broken fried tortillas. let each person select his own garish. Alternative Methods: 1 - Saute onions, garlic, pappers, in oil first.
