Guest guest Posted October 18, 2002 Report Share Posted October 18, 2002 Potato-Mushroom Chowder Time: 52 minutes (15 min prep, 37 min cooking) Makes: 4 servings 1/2 cup chopped onions 1/4 cup butter 2 tablespoons flour 1 teaspoon garlic powder 1/2 teaspoon thyme 1 teaspoon salt 1/2 teaspoon pepper 3 cups water 1/2 lb fresh mushrooms, sliced 1 cup chopped celery 2 cups diced potatoes 1/2 cup chopped carrots 1 cup light cream 1/4 cup grated parmesan cheese 1. Saute onion in butter; add flour and seasonings. 2. Slowly add water, stirring. 3. Bring to a boil, cook 1 minute. 4. Add remaining ingredients, reduce heat and simmer for 30 minutes. 5.
