Guest guest Posted October 16, 2002 Report Share Posted October 16, 2002 Garlic Mashed Potatoes If you like, instead of cooking the potatoes with the garlic, add roasted garlic when mashing. Garlic lovers should feel free to use a whole head. Ingredients 1 1/2 pounds (720 g) potatoes, preferably Yukon Gold, peeled and cut into 2-inch (5-cm) chunks 4 to 6 cloves garlic, peeled 3/4 cup (12 fl oz/360 ml) nonfat buttermilk or plain 1% soy milk - - Sea salt to taste - - Freshly ground black pepper to taste Preparation - Estimated cooking time: Under 30 minutes - 1 Place potatoes and garlic cloves in a large saucepan. Add cold water to cover and salt. Bring to a boil over medium heat. Cook until the potatoes are very tender, about 15 minutes. 2 While the potatoes are cooking, gently warm the buttermilk or soy milk--do not let it boil. 3 Drain the potatoes and garlic and mash with a potato masher or work through a ricer. Add the warmed buttermilk or soy milk and mash to a smooth puree. Season with salt and pepper and serve.
