Guest guest Posted October 8, 2002 Report Share Posted October 8, 2002 Cinnamon Cornbread The sweet warmth of cinnamon pairs beautifully with cornmeal for an appropriate grainy accompaniment to this spicy sweet meal. Cinnamon attracts money and luck, helping to create a full pantry for the colder months ahead... 1/4 cup canola oil or vegetable oil 1 1/4 cup cornmeal, stone-ground 3/4 cup unbleached all-purpose flour 1 tsp. baking soda 1 ½ tsp. baking powder 1/4 tsp. sea salt 3 Tbs. light brown sugar 2 free-range eggs, beaten 1 cup organic milk (or non-dairy milk) 1 tsp. cinnamon ½ tsp. allspice 1/8 tsp. ground cloves cinnamon, for topping Preheat your oven to 400 degrees. Oil a 9 x 9 inch baking pan. Combine all of the ingredients listed above, and stir quickly to blend, keeping it a bit lumpy. Pour the batter into the prepared baking pan and sprinkle extra cinnamon over the top, swirling it into the batter slightly. Bake for 20 - 25 minutes, until done.
