Guest guest Posted September 25, 2002 Report Share Posted September 25, 2002 Mushroom Barley Soup 1 onion, chopped 1 stalk celery, diced 1 clove garlic, minced 1/2 lb. mushrooms, sliced 2 Tbsp. oil 1/4 cup soy sauce 1/2 cup hulled barley 1/2 tsp. salt 1/2 tsp. garlic powder 1 tsp. dill 1 tbsp. parsley, chopped 5 cups water 1 - 2 carrots, sliced In a large pot, combine onion, celery, garlic, and mushrooms with oil and saute for 5 minutes. Add barley, soy sauce, seasonings, and water. Bring to a boil, and simmer for 2 to 3 hours. About 45 minutes before it's done, add the chopped carrots.
