Guest guest Posted September 25, 2002 Report Share Posted September 25, 2002 Quick Scallion Seitan Saute over Soba Noodles 1 8-oz. package soba noodles 1 bunch scallions 5 - 6 large button mushrooms 8 cloves garlic 1 cup seitan (plus juice) 1 Tbsp. miso 1/4 - 1/2 cup water Slice scallions into 1/2 inch pieces, including the green tops. Mince garlic. Slice mushrooms thinly. Cut seitan into bite-sized cubes. In a medium frying pan, cook all the ingredients together in water and the seitan broth, adding more when necessary to prevent burning, and to provide a sauce for the pasta.
