Guest guest Posted September 25, 2002 Report Share Posted September 25, 2002 Scrambled Tofu Makes 4 - 5 servings 1 lb. extra firm tofu 1 small onion, minced 1 green pepper, diced 1 summer squash (any variety) 1/4 cup nutritional yeast 1 small carrot, diced 2 Tbsp. soy sauce 1 tsp. dried dill 1 tsp. garlic powder 1/4 tsp. turmeric Salt & pepper to taste 2 - 3 Tbsp. canola oil Squeeze excess water from tofu and crumble. Set tofu aside. Saute onion, pepper, and carrot in oil for several minutes. When soft, add tofu, mix well, and add all other ingredients (grate the squash or cut into very small pieces.
