Guest guest Posted September 25, 2002 Report Share Posted September 25, 2002 Blueberry Muffins Makes 12 muffins 1 cup blueberries 1 cup whole wheat pastry flour 1/2 tsp. salt 1/2 tsp. cinnamon 1/2 cup wheat germ 3 Tbsp. applesauce 1/4 cup sugar or Sucanat Egg replacer equal to one egg 3/4 cup soymilk 1 3/4 tsp. baking powder Preheat oven to 375 degrees. Grease a 12-cup muffin tin with vegetable oil or margarine. Wash and drain berries. In a bowl mix all ingredients together except for blueberries and baking powder. When well mixed, add remaining ingredients and mix again. Spoon into muffin cups and bake for 15 to 20 minutes. I use large muffin tins. When making, I usually double this recipe and only use one muffin tin for the whole batch. When cooking larger muffins, increase cooking time to 25-30 minutes. Insert a toothpick or knife.
