Guest guest Posted September 25, 2002 Report Share Posted September 25, 2002 Corn, White & Green Beans in Green Onion Sauce 3 or 4 green onions 1/3 cup olive oil 2 cloves garlic Salt & pepper to taste 2 cups green beans 2 tsp. light miso 4 ears fresh corn 1 cup dry Great Northern or Navy beans Soak beans overnight and cook in water for 1 1/2 - 2 hours. Do NOT use canned beans in this recipe, they will be too soft and overcooked. Chop green onions and garlic and place in a food processor with oil and seasonings to taste and process until you have a smooth sauce. Set aside. Trim green beans and cut into 1-inch segments. Steam for approximately 5 minutes, and set aside. Cut corn from cob. Dissolve miso in 3/4 cup water. Bring to a boil, add corn and simmer 5 minutes or until tender. Add white beans to corn with green beans and bring to a boil. Add green onion sauce and heat mixture over medium heat, stirring for several minutes, until well blended and heated through.
