Guest guest Posted September 10, 2002 Report Share Posted September 10, 2002 Hot-Style Garlic Spinach Ingredients 1 tablespoon cooking oil 1/4 teaspoon chili oil 4 cloves garlic, minced 1 small red or yellow sweet pepper, cut into thin strips (3/4 cup) 1 10-ounce package prewashed fresh spinach, torn (8 cups) 1-1/2 teaspoons fish sauce or soy sauce 1/8 teaspoon pepper Directions: 1. Pour cooking oil and chili oil into a wok or 12-inch skillet. (Add more cooking oil as necessary during cooking.) Preheat over medium-high heat. Stir-fry garlic in hot oil for 15 seconds. 2. Add sweet pepper; stir-fry for 2 minutes. Add spinach; stir-fry for 2 to 3 minutes or just until spinach is wilted. (Add 1 tablespoon water if spinach mixture is dry.) 3. Stir in fish sauce or soy sauce and pepper. Serve immediately with a slotted spoon. Makes 3 to 4 servings.
