Guest guest Posted September 10, 2002 Report Share Posted September 10, 2002 Garlic and Pepper Stir-Fry Ingredients 1 tablespoon cooking oil 2 to 3 cloves garlic, minced 2 medium carrots, bias-sliced 1/2 of a medium red sweet pepper, cut into strips 1/2 of a medium green sweet pepper, cut into strips 1/2 of a medium yellow sweet pepper, cut into strips 1 small onion, sliced and separated into rings 1 cup sliced fresh mushrooms Directions: 1. Preheat a wok or large skillet over high heat; add oil. Add garlic and stir-fry for 1 minute. 2. Add carrots and stir-fry for 2 minutes. 3. Add peppers and onion and stir-fry for 2 minutes. 4. Add mushrooms and stir-fry about 2 minutes more or until vegetables are crisp-tender. Makes 4 servings.
