Guest guest Posted August 1, 2002 Report Share Posted August 1, 2002 Gazpacho ªUse less salt in homemade soups. 3 medium tomatoes, peeled and chopped 1/2 cup cucumber, seeded and chopped 1/2 cup green pepper, chopped 2 green onions, sliced 2 cups low-sodium vegetable juice cocktail 1 tablespoon lemon juice 1/2 teaspoon basil, dried 1/4 teaspoon hot pepper sauce 1 clove garlic, minced 1. In a large mixing bowl, combine all ingredients. 2. Cover and chill in the refrigerator for several hours. Yield: 4 servings Serving size: 1 1/4 cups Each serving provides: Calories: 52 Total fat: Less than 1 g Saturated fat: Less than 1 g Cholesterol: 0 mg Sodium: 41 mg Calcium: 32 mg Iron: 29 mg ===== Language is an expression of thought.
