Mexican Tomato Salad

 

2 large tomatoes, chunked

4 cup lemon juice

4 cup cilantro, diced

2 cup cucumber, coarsely chopped

2 onion, diced

4 cup sliced olives

 

Combine all ingredients. Allow to marinate at least

one hour to develop flavor. Serve chilled.

 

Serves: 6.

 

Calories per serving: 25; protein: 0.8 grams;

carbohydrate: 4 grams; fat: 1 gram; cholesterol: 0

milligrams; sodium: 37 milligrams.
