Guest guest Posted June 25, 2002 Report Share Posted June 25, 2002 Red Bell Pepper And Cheddar Spread1/2 sm Onion, Quartered3 lg Cloves Garlic, Peeled2 tsp Olive Oil2 Red Bell Peppers1 1/2 c Tillamook Cheddar Cheese, Or Other Sharp Cheddar, Grated AndPacked To MeasureDash Cayenne Pepper2 tbl Chives, Fresh, ChoppedPreheat oven to 375 degrees. Place onion and garlic in small bakingdish. Drizzle with oil. Bake until soft, stirring occasionally, about50 minutes. Cool. Meanwhile, char peppers over gas flame or underbroiler until blackened on all sides. Cool 10 minutes. Peel and seedpeppers; pat dry. Place all ingredients except chives in processor.Puree until almost smooth. Transfer to bowl. Stir in chives. Seasonwith salt and pepper. Cover and refrigerate at least 2 hours.
