Savory Wild Rice

 

1 cup uncooked wild rice

8 ounces tofu*

2 Tbsp. vegan margarine

1/2 cup sliced green onions

1 cup sliced celery

1 cup sliced mushrooms

2 - 4 oz. cans water chestnuts, chopped

2 tsp. beef-like seasoning and broth mix (Bill's Best)

1/2 tsp. salt

1/2 cup chopped fresh parsley or 1/4 cup dried parsley flakes

 

Preheat oven to 350 degrees F. Cook rice according to package directions.

Scramble tofu in margarine until golden brown; use a slotted spoon to break

into small pieces. Remove from skillet. Saute onions, celery, and

musthrooms until tender. Add all other ingreidents; place in a 9 " x 13 "

casserole. Cover with oil; heat for 30 minutes.

 

*Note: Freeze tofu first, then thaw and squeeze out liquid for a chewier

texture.
