Guest guest Posted May 22, 2002 Report Share Posted May 22, 2002 Spicy Nuts With Dried Cranberries 1 cup whole raw almonds 1 cup pecan halves 1 cup roasted pepitas (pumpkin seeds) 1 cup dried cranberries 2 teaspoons ground cinnamon 1/2 teaspoon ground chiptole pepper or cayenne pepper 1 (2-pound bag) confectioners' sugar (divided use) 1 tsp. rum extract/flavoring (optional) Water (if necessary) Spray a cookie sheet or large baking pan with oil. Set aside. Mix nuts, cranberries and spices. In a large pot over medium heat, pour in 1 pound (about 4 cups) confectioners' sugar. Immediately add rum flavoring and stir well. Bring to a simmer and add nut mixture, stirring constantly. If nuts aren't completely coated with mixture, add a little water. When nuts are coated, add remaining sugar and cook, stirring constantly, for about 5 minutes. Remove pan from heat and immediately empty mixture onto cookie sheet, spreading as thinly as possible. Cool. Break apart and taste for flavoring, sprinkling with more spices to taste, if necessary. Store in a tin.
