Guest guest Posted April 19, 2002 Report Share Posted April 19, 2002 Herby Roasted Potato Wedges Servings: 4Ingredients:5 large potatoes, peeled and cut into wedges1/4 cup vegetable oil1/4 cup chopped fresh parsley1 tablespoon chopped fresh thyme1 tablespoon chopped fresh oregano1 teaspoon salt1 teaspoon black pepperDirections: 1. Preheat oven to 450 degrees F (230 degrees C). 2. In a large bowl, toss potato wedges with oil. Arrange in a single layer in a roasting pan. 3. Bake in preheated oven for 50 minutes. Sprinkle with parsley, thyme, oregano, salt and pepper. Bake for 10 minutes, or until golden brown.
