Sweet Potato Soufflé

 

 

5 or 6 med sweet potatoes cooked till tender and

pealed (I bake mine)

2 eggs

2 Tbs butter

1 1/2 cup sugar

1/4 cup evaporated milk

2 tsp vanilla

 

Topping

1 cup brown sugar

1/2 stick soft butter1/2 cup pecans

In a large mixing bowl beat potatoes till smooth. Add

remaining ingredients except the topping. Blend well.

Spread evenly in a 13 x 9 " greased baking disk. Mix

the topping ingredients together and spread evenly

over potatoes and bake in preheated oven at 375° for

20 minutes.
