Guest guest Posted March 11, 2002 Report Share Posted March 11, 2002 Real Key Lime Pie Make a cooked pie shell in a small sized pie pan. A large one will be too big for this recipe. One half cup juice of key limes. (you may use Persian limes of you cannot find the Key limes but the taste is not as exqusite) One can Eagle Brand sweatened condensed milk. Three Egg Yolks This mixture does not get cooked. The acid in the limes " cooks " the yolks. Beat the mixture until it begins to thicken. It will take at least ten minutes or more. Then pour it in the baked pie shell and refridgerate over night. Cover with whipped cream and serve. This is authentic.
