Faux Tuna Salad Source: How It All Vegan

 

 

1 lb firm tofu, frozen then thawed

1 stalk celery, diced

1/4 medium red onion, chopped

1 small carrot, finely chopped

1/2 cup soy mayonaisse

2 Tbsp braggs or soy sauce

1/2 Tbsp lemon juice or vinegar

1/2 - 3/4 tsp kelp powder

 

Squeeze excess moisture out of tofu, then crumble it into small pieces. In

a medium bowl, combine the tofu, celery, onion and

carrot. Stir in the mayonnaise, braggs, lemon juice and kelp and mix

well together. Makes 2-4 servings.

Soy Bean Loaf

1 c. soy beans, soak overnight

1 1/2 c. water

3-4 stalks diced celery

1 diced onion

2 diced pimientos

1 c sliced pitted olives

Fresh or dried parsley

1/4 t. garlic powder

1/2 t. salt

1/4 t. paprika

1/2 t. sage

1 T. soy sauce

1 T. yeast flakes (brewers)

1/2 c. bread crumbs or oatmeal

 

Blend soy beans and seasonings in water. Add the other ingredients and put

in a casserole baking dish. Bake at 300 degrees for 2 hours.

 

12 1/2 c. servings 127 calories per serving
