CHINESE CLEAR NOODLE SALAD

1 package bean thread noodles, cooked

2 cups baby field greens

1 cup thinly sliced Napa cabbage

2-3 ears of corn steamed and kernels removed

1 cup green onions, finely chopped

Sesame Orange Vinaigrette

Toasted sesame seeds

 

· In a large bowl combine all ingredients and toss with Sesame Orange

Vinaigrette (recipe follows)

· Top with freshly toasted sesame seeds

 

 

 

SESAME ORANGE VINAIGRETTE

1 cup orange juice

1/3 cup rice vinegar

1 inch piece fresh ginger, chopped

2 cups sunflower oil or corn oil

1/3 cup toasted sesame oil

1 tb. sea salt

1/3 cup maple syrup

1/2 tsp. white pepper.

 

· Puree ginger with orange juice and rice vinegar in blender

· On low speed slowly add oils, then salt, maple syrup and white pepper.
