Concern as a diabetic

I had found online the Vegan Food Pyramid. I notice the bottom of the

pyramid or base of the Vegan diet seems to be pasta bread and grains

but as a diabetic I have to watch all those carbs.

 

Suggestions?

I have IGT and although complex carbs are better, they still have a

much heavier impact on blood sugar than fats or protein.

 

First off, I have experimented using my meter. I have found that I

can only eat about 1/2 cup of grains/ 1 slice of bread in a

sitting. I augment this with vegies and tofu/seed/nuts/beans. I

don't skimp on things like tahini even though they have more fat

because, not eating so many carbs, I need the calories.

 

I also eat more frequent, smaller, meals. I use 140 ml as the max

postprandial reading to shoot for.

 

So even though it is a little trickier going " low-carb " as a vegan

(for glucose control), it is still worth it. I feel so much better

and I am looking forward to the time when the glucose control will

not be necessary.

 

Even a weight loss of 10 pounds can cause an improvement in glucose

tolerance. And in the last 2 months of eating vegan, I have lost 6

lbs.

 

So hang in there. Let your meter be your guide and enjoy the new

lifestyle. It is win win all around - better health, reduced

animal abuse, and an improved environment.
