I decided just to ease myself in and I still don't know as much as I need to abot food additives etc etc. Getting there though. About that article " The Truth About Milk " , I do share the view that it was poorly presented, poorly referenced and disgracefully spelled BUT the thing about the connection with diabetes is quite correct, I believe. Although I am no expert on this, it seems that in the general population there are about 3% of adults who test positive for the antigen to a particular milk protein. However when a study of about 400 type 1 diabetic patients were tested they ALL showed signs of this antibody!! Quite a result. Anyway, there is a theory that because the questinable milk protein bears a remarkable resemblance to the surface identification protein found on the beta cells in the pancreas (which produce insulin) that frequent milk consumption (esp by children) sets up an immune reaction to the milk protein .... which then is erroneously directed at the beta cells killing them off and leaving the individual diabetic!!
