Both are made by spectrum, but I'm sure similar items are made by many companies. As for baking I just tend to be lazy. You can replace milk with soy, rice, or almond milk (I use soy), eggs with egg replacer or ripe bananas (half an average banana per egg), and vegetable shortening in place of butter.
