It does sound good though with it. Well...yeah, it might be. The good news is that it's so much work to fry up the eggplant that you only do it seldom, so it's a special treat. But it's not the egg and matza meal that is unhealthy--it's the frying. I've been told (never tried it) that you can " oven fry " it by brushing lightly with oil and baking instead of pan frying...
