It's really easy, it takes about 5-10 minutes, and less once you've made it a couple of times, and it doubles and triples and quadruples well. The basic recipe is this: *1/4 cup whole wheat flour *1/12 cups of hot vegetable broth *2 tablespoons of tamari (organic soy sauce) *2 tablespoons of nutritional yeast (optional, I've mad it with and without it, the taste is the same it just adds some nutritional value as the name implies) *salt and pepper to taste In a heave skillet, cast iron if you have it, over a medium flame, brown the flour. Use a wooden spoon to stir constantly until the flour becomes a rich brown color. Slowly add the hot veggie stock and tamari, stirring constantly to avoid lumps. Stir in nutritional yeast and add salt and pepper. The book has variations you can add, musrooms, carrots, squash.... Anyway, I first made the gravy not long ago and my husband the meat eater was shocked, he wanted to know how I got it to taste so great without the meat! If anyone wants also, the cookbook is " Vegetarian Meals for People on the Go " By Vimala Rodgers. It was a bridal shower gift, I got a TON of cookbooks (my family knows me well) and this one was the smallest and cheapest and it has the best recipes and tips on healthy veggie cooking and lifestyle. The recipes vary from various cultures, and I've liked every one I've tried. I especially like the veggie shephards pie, which the above gravy works for perfectly! Shabbat Shalom all!!!!
