BANANA CREAM PUDDING 1 lb. extra firm, dry-packed tofu 3 to 4 ripe bananas 4 Tbsp. real maple syrup Press all excess water out of tofu and cube. Combine bananas and syrup in blender/food processor. Add tofu. Blend until smooth. Pour into parfait dishes. crust. Refrigerate until it sets. INSTANT CHOCOLATE PUDDING (Serves 4) One 12.3-ounce package lowfat firm silken tofu, drained 1/3-1/2 cup maple syrup 1 Tablespoon vanilla extract ½ cup unsweetened cocoa powder In food processor or blender, combine all ingredients until smooth. Refrigerate several hours or overnight, until thoroughly chilled. Total calories per serving: 108 Fat: 2 grams Carbohydrates: 22 grams Protein: 7 grams Sodium: 57 mg Fiber: 2 grams CHOCOLATE TOFU BERRY WHIP Recipe By :Earl Mindell's Soy Miracle Cookbook Serving Size : 3 1 10 ½ oz package firm or extra-firm low-fat tofu 1 cup raspberries or any other berries-frozen and unsweetened ½ cup fruit-sweetened blackberry jam 1 teaspoon vanilla extract 1 teaspoon fresh lemon juice 1 tablespoon cocoa powder Place the tofu, berries, jam, vanilla, lemon juice, and cocoa powder in a food processor. Process until smooth. Spoon into parfait glasses and refrigerate until set.
