The chef said he was having problems trying to make a vegan roux. Presumably, has tried making it with olive oil and flour (because I know they have plentiful supplies of olive oil), and I would expect the kitchen isn't going to start buying Pura (although they do buy catering quantities of Realeat, so you never know), so ... I promised I'd try to find out how to make a vegan roux. Google was useful for telling me what a roux is, and for giving some ideas, but I can't simply come back with something I found on google.
