My favorite egg substitute in baking (pancakes, waffles, quick breads) is psyllium husks. I bought a big canister of it at the health food store. For one egg, substitute 1 tsp. psyllium husks and 2 Tbsp. water. Let it sit for a few minutes, then stir well, then add to the recipe.
