substitute for apple juice concentrate?

Hi everyone! I'm making snacks for my twin girls' school for

tomorrow. The recipe for Blueberry Corn Muffins that I have calls

for 1 cup apple juice concentrate. Here are the other ingredients:

 

flour

cornmeal

baking powder

salt

cinnamon

oil

silken tofu

maple syrup

applesauce

vanilla extract

blueberries

 

Any ideas on how to replace that much apple juice concentrate? If

not, I guess I can go to the store...ugh! ;-)

I'm probably too late, but maybe not... Replacing the apple juice

concentrate with maple syrup would probably work well, although it

would be expensive. Another liquid sweetener would work. Or maybe water

with some sugar or something dissolved in it?

 

Let us know how the muffins turn out...

As far as I know, apple juice concentrate would be vegan :-) I read

Julie's email to say that she just didn't have any in the house and

didn't have time to go to the store.
