I've got the stirfry down pat and made a caserole the other day but wasn't too impressed with it. I don't eat tofu or beans very much and lots of recipes I am finding have these. (I get my protein from wheat, peanut butter, etc etc). I like one dish meals for during the week though and I'm running out of ideas. Guest guest Posted February 3, 2004 Report Share Posted February 3, 2004 Last night I made: 1 bag frozen garden vegetables 4 cups water a 8-oz. can tomato sauce 1 bullion cube 1 can kidney beans Dump and heat 30 minutes. This kind of thing works with lots of applications. Rice casserole with an envelope of stir-fry mix, cooked rice, and the veggies. Also, cooked, chunks of potatoes with the veggies and a can of cream of mushroom soup (Amy's Kitchens has one that is fairly readily available in supermarkets). I vary the style/blend of vegetables to the starch or bean pairing and my taste. And, when you can get these store brand for $1.00 per, it is a very cheap meal, too. Hope that inspires. The add your spices. Curry powder or cajun mix or italian mix or whatever you fancy. Drain the beans and add to the pot. Simmer for 5 minutes or so and pour over cooked rice or a baked potato or pasta or toast.
