Lentil Crunchies - A great snack!

Wow - these sound great! The girls are all more into salty than sweet, which is

good :)

Thank you all for the Welcome messages :) I am learning daily but as I have

cooked with meats all my life I find myself lost without the use of the meat

products that I have always used.

Thanks....Had to make this today. I didn't have curry powder but used garlic

powder, chilli powder and cumin. It was really good and I ate most of it for

lunch! I'm already thinking what other spices I can put on it. I have high

blood pressure so I'd love a snack that satified my salt cravings without

salt...

 

Side note: As I was munching on the lentils it suddenly reminded me of the

folks on the realality show Survivor! Remember how they lived on roasted corn??

This is a great little snack food to have on hand for those salty

cravings.

 

Lentil Crunchies

 

1 c lentils (not red)

1 quart water

Cooking spray of your choice (I used olive oil)

¼ tsp onion powder

¼ tsp curry powder

1/8 tsp cayenne pepper

Place water and lentils in a saucepan. Bring to a boil, cover,

remove from heat, and let sit for 15 minutes. Drain and spread out

on paper towels to dry. (I let mine sit for about 20 minutes, and

then sponged them off again with another paper towel.) Line a cookie

sheet with foil. Spray well with cooking spray. Spread out lentils

on sheet and give them a light coating of cooking spray. Bake in a

425 degree oven for 15-20 minutes, until crisp, stirring often.

Combine seasonings and toss with hot lentils. Cool and store in a

airtight container.It's a wonderful little salty snack!

This is very clever! It's the same idea as, say, soaked (and then dried off)

garbanzo beans,

deep fried and then rolled in the spices - isn't it? Except that deep frying is

not a goodie

and the idea of the tiny lentil nibbles is more attractive to me ;-) I guess you

could happily

use green or brown lentils - that's what I keep on hand for dhal etc.

Philippines, this recipe will actually make me buy some.
