I love winter apples, and like 'em crisp, and I bought a

big bag of galas. Unfortunately, this bag had mostly mushy

apples, so, I thought I'd either find or create the perfect

applesuace recipe, and this one I've devised myself works

quite well!

INGREDIENTS:

4 large apples, peeled, cored, and chopped

1/2 - 1 cup water

1/4 - 1/2 cup honey

1 tsp lemon juice

2 tsp cinnamon

PREPARATION:

Put all the ingredients in a large sauce pan and cook on medium heat

until tender, about 20-30 minutes. Mash the mixture using a food

masher, an electric mixer, or hand blender until it is smooth. Put

into a covered dish and place in refigerator. Serve chilled for a

delightfully nice natural snack or side dish. I used 100% pure

vitamin C crystals instead of lemon juice with good results; I

dissolved in a little bit of warm water, then added to the mixture

before it heated up. I really like cinnamon, so I used a little

more. If you like a thicker bodied sauce, use less water. And you can

substitute sugar for honey. If you like applesauce, nothing beats

homemade!

A homemade applesauce is great and really delicious. You're sure that it's safe to eat because you're the one who made it. As we can remember, in the summer of 2011, Washington state apple manufacturer Snokist recalled thousands of cases of applesauce that had been sold to schools. The facility that processes this applesauce is now under FDA investigation. The operation of "re-processing" bad applesauce is theoretically lawful. FDA investigating Snokist plant for repackaging moldy applesauce. Snokist officials have responded to questions about this recall asked by a few news agencies. The company admits that they “rework” moldy food for use in future packaged goods.
