Many years ago I was in your shoes - and it was such a worry every time my vegetarian friends (and we had several) were coming over because I too wanted to serve them something besides the predictable pasta with veg or stir-fried veg over rice. Gradually, of course, I came to prefer the dishes I cooked for my vegetarian friends to those I cooked when they were not around . . . ;=) Anyway, enjoy the list - jump in with any chatter or questions - have fun!
